First opened in 2003, the High Speed 1 rail line, or HS1, connects London to the English Channel. In 2006, amidst its expansion, a dig site was uncovered which contained an anthropological milestone: a hearth and associated tools that date back 400,000 years and provide the earliest known evidence of the practice of butchery.
While 'the world’s oldest profession' is a common euphemism for sex work, butcher may in fact predate 'lady of the evening': butchery organizations existed in Medieval England as early as the 10th century, and the first official butcher’s guild began in 1272. But while butchery and meat consumption were key to human-brain development and the spread of civilization, today we live in the age of high-speed rail — at least outside of North America — and many now opt to forego meat entirely for ethical and health reasons.
Enter Heather Tierny, a food writer turned cocktail-bar owner who parlayed her knowledge of New York’s dining scene into launching a flavor-forward plant-based wellness cafe that felt like a neighborhood hang. Opened in 2012, the restaurant was a sensation among foodies, vegetarians, and influencers, and another New York outpost followed. In 2016, Tierney opened the first West Coast branch in the ultra-trendy Abbot Kinney district of LA’s Venice neighborhood. Her brand’s success with beachgoing locals was such that a 2018 LA Weekly piece about her growing empire was headlined “Heather Tierney Is The Goddess Of Venice.”
Today with five locations in hip sections of The Big Apple and Tinseltown, this plant-based juice bar/coffee shop/fine-dining restaurant serves an affluent, health-conscious clientele who also wants to get their drink on. As Tierney is quoted in her LA Weekly profile, quote, “Just because you are eating healthy or vegetarian doesn’t mean you should be punished by sitting in a bad environment or having boring food.”
Just don’t let the name fool you: if you go to see this butcher, no meat shall you eat.
