Hayes Valley, San Francisco, CA
"Cerebral Valley": during the AI boom of the post-COVID 2020s, this nickname surfaced for the historic San Francisco neighborhood of Hayes Valley. The reason? The area had become a mecca for AI startups and so-called "hacker houses" and a microcosm for San Francisco's gentrification from a vibrant, bohemian, multi-ethnic port city into a charmless bedroom community for tech assholes who are now also MAGA.
But thankfully, AI isn't the only startup that has its roots in this historic SF neighborhood.
In 2014, Charles Bililies, a former protégé of Thomas Keller - whose restaurant, The French Laundry, was a quarantine favorite of Gavin Newsom - parlayed his accumulated business and culinary knowledge into his own Hayes Valley restaurant: a Greek/American concept names for the spits on which Mediterranean meats are roasted. Billed as "fast fine," Bililies served in-house diners lamb sandwiches and Greek wines on proper dishes and in stemware, merging the elegance of a sit-down concept with a counter-service efficiency of former 'It's-It girl' fast-casual. The restaurant was an immediate hit, no doubt nourishing coked-up AI shitheads who will someday engineer software to automate human restaurant workers out of existence.
Today, with six locations plus a ghost kitchen in The Bay, the Greek chain's rapid growth and list of celebrity fans may cause one to wonder if "Cerebral Valley" should be re-named "Gastrointestinal Valley."
