Culinary Arts Institute Encyclopedic Cookbook

In this segment, The Doughboys take a look at Lindsay's copy of Culinary Arts Institute Encyclopedic Cookbook (1950).

Nick also brings a copy of the recipe of the Ham and Bananas Hollandaise from a different book, which you can see above.

They don't delve into it all that much, but do mention such listed delicacies as Spam 'n' Banana Fritters, Jellied Meat Loaf, and Jellied Salmon Mold. (See below.)

Lindsay reads a list of what should be on a woman-on-the-go's "emergency shelf" in 1950: ready-to-mix pie crust, pancake flours, cake mixes, canned date and nut bread, canned fruits and vegetables, canned meat, canned fish (salmon, tuna, crab meat, lobster), chicken a la king, canned nuts, anchovy paste, pickles, olives, maraschino cherry, and syrup.

Here is the recipe for Bologna and Prune Sandwich with baby food in it that Nick found.

Kelly has a copy of America, A Regional Cookbook, which includes recipes for She-Crab Soup and Cream of Peanut Soup.
